Today at my local farmer’s market, one of my favorite stands had sliced raw yellow with red stripe beets out as samples. I hadn’t seen raw beets set out to sample raw before and I gave them a try. I was surprised by how nicely sweet they were with a little bit of beet “dirt” flavor. I found they are Badger Flame Beets | Fresh Harvest. I had never heard of Badger Flame Beets, but after tasting I picked up four or five. It seems like they would go well thinly sliced with a light olive oil and balsamic vinegar with some thinly sliced sweet onion, crumbled feta, and toasted pine nuts.
I seem to have left pieces of myself scattered around the internet. This is my attempt to pull some of those pieces together.
